How to tell if your pie is done?

If you are a fan of The British Baking Show you know that one of Paul Hollywood's pet peeves is a "soggy bottom". We feel the same way! But how do you know if your pie is done and especially the bottom crust? First of all, the top pie crust should be well browned. An anemic looking pie is unappetizing and the browning of a crust adds flavor. The best way to determine if the bottom crust is cooked is if the filling is bubbling. Yep! A boiling pie filling means that it is very hot and this will make sure that your bottom crust is adequately cooked. You can often see the hot filling bubbling out vent holes or between layers of crust. Let it bubble for five minutes and you can be sure Paul Hollywood would approve.
